I just ordered a GMKTec G3 with an Intel N100. I ordered the barebones version so I can customize it as I see fit. Il start out with a 32GB stick and a random 256GB Sata SSD connected via USB as the main drive (plus a 480GB as a media drive thats already full). Il then install a 2TB NVME SSD.
Anway, how would you guys go about setting up a server on the software side? Personally I was thinking of installing Debian (or Arch since I am way more familiar with that, the OS doesn't really matter anyway) and running all services in docker containers. Would you guys do the same or would you, say, take the ProxMox approach?
I'm sure the N100 with 32GB of RAM can handle most things thrown at it, including a minecraft server for a few players so im not too worried there (right?).
Edit: After all the replies I think you guys have convinced me to try proxmox. I will when the mini pc arrives in like 3 weeks. For anyone wondering, I currently host pihole + unbound on my Pi Zero 2 W directly on bare metal. I used to host more but the Pi couldn't take it. I am planning to host homeassistant, which would be good to run on its own VM, some kind of torrent web ui, file sharing, cloud, and a minecraft server just to name a few.
